&lt;p&gt;This quick and easy vegan quinoa salad is perfect to make early and enjoy throughout the week. Packed with flavor, color, and texture, you’ll get your Mexican fix without all the cheese or calories.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;em&gt;Ingredients:&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 cup (uncooked) quinoa&lt;/li&gt;
&lt;li&gt;1 cup water&lt;/li&gt;
&lt;li&gt;1 cup vegetable broth (low sodium if possible)&lt;/li&gt;
&lt;li&gt;1 cup canned black beans, drained and rinsed&lt;/li&gt;
&lt;li&gt;1 very ripe avocado, chopped&lt;/li&gt;
&lt;li&gt;1 small pepper (any color), diced&lt;/li&gt;
&lt;li&gt;1 cup salsa &lt;em&gt;(or 1/2 cup salsa and 1/2 cup chopped fresh tomatoes)&lt;/em&gt;&lt;/li&gt;
&lt;li&gt;1 teaspoon each of: cumin &amp; chili powder&lt;/li&gt;
&lt;li&gt;1/4 teaspoon pepper&lt;/li&gt;
&lt;li&gt;1 Tablespoon fresh cilantro, chopped &lt;em&gt;(optional)&lt;/em&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;&lt;em&gt;Instructions:&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1) Combine quinoa, water, and vegetable broth in a pot. Bring to a boil, then cover, reduce to a simmer, and cook 10 to 12 minutes (until all liquid is absorbed).&lt;/p&gt;
&lt;p&gt;2) Let quinoa cool, then combine in a large bowl with all other ingredients.&lt;/p&gt;

&lt;p&gt;We all know being vegan doesn’t necessarily mean those around you will be as enthusiastic or that you will enjoy cooking any less. Today I cooked for three omnivores and myself, using another one of my made up recipes. &lt;/p&gt;
&lt;p&gt;When cooking meat for others I want it to taste good, even if I don’t necessarily partake in the consumption. Here’s what I did to make these pork chops stand out from the rest:&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Prepare a brine of the juice of two freshly squeezed oranges (I used a juicer), one half cup of brown sugar or pure maple syrup (for all you health conscious omnivores), 1 TBL dried time, 2 TBL garlic salt, and fresh cracked pepper corns. Add water to fill 3/4 contents of mixing bowl. Add thawed pork chops and refrigerate for no more than two hours, so the chops do not become too mushy.&lt;/li&gt;
&lt;li&gt;Remove from brine. Grate some orange zest over the chops. Brown pork chops in a pan with a dash of olive oil for three minutes per side. Place in 350 degree oven for a half our before serving. &lt;/li&gt;
&lt;/ol&gt;&lt;p&gt;For the Roasted Vegetables&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Cut carrots into halves length wise and cut in half once width wise. Slice Potatoes and onions. Repeat until there is well over enough to coat contents of a large roasting pan *may vary depending on how many guests&lt;/li&gt;
&lt;li&gt;Drizzle vegetables with olive oil. Season with thyme, rosemary, garlic salt, and pepper. Add vegetable stock to coat contents of pan. &lt;/li&gt;
&lt;li&gt;IMPORTANT- cover roasting pan with foil. This helps seal in the heat and cook vegetables until tender. &lt;/li&gt;
&lt;li&gt;Bake at 350 for one hour.&lt;/li&gt;

&lt;li&gt;2 TBL cocoa powder&lt;/li&gt;
&lt;li&gt;2 TBL peanut butter&lt;/li&gt;
&lt;li&gt;1/2 cup Greek yogurt (optional)&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Blend ingredients until smooth, dish out into about three small dishes. For all those skeptics, no one would even know they were vegan. I cannot believe the dough blends so well with only one TBL of almond milk or soy milk. Add some dark chocolate pieces if desired, or different dried fruits for a new flavor.  &lt;/p&gt;
&lt;p&gt;Vegan Oatmeal Cookies&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 &amp; 3/4 cups walnuts, toasted&lt;/li&gt;
&lt;li&gt;2 cups regular oats, divided&lt;/li&gt;
&lt;li&gt;3/4 cup white Kamut flour (other flours probably work!)&lt;/li&gt;
&lt;li&gt;1/2 cup &lt;a href="http://en.wikipedia.org/wiki/Sucanat"&gt;Sucanat&lt;/a&gt; (or brown sugar)&lt;/li&gt;
&lt;li&gt;1 tsp baking soda&lt;/li&gt;
&lt;li&gt;1/2 tsp cinnamon&lt;/li&gt;
&lt;li&gt;1/2 cup pure maple syrup&lt;/li&gt;
&lt;li&gt;2 tbsp almond milk or soy milk&lt;/li&gt;
&lt;li&gt;3.5 tbsp coconut oil&lt;/li&gt;
&lt;li&gt;2 tsp pure vanilla extract&lt;/li&gt;
&lt;li&gt;2/3 cup raisins&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Preheat oven to 350 and toast walnuts. In the mean time, mix together dry ingredients and wet ingredients separately. *Tip- I popped the wet ingredients in the microwave for about 45 minutes before stirring, so the coconut oil is more apt to mix with the rest.* Now, combine the wet and dry ingredients, stirring occasionally. Next, I placed the dough into a mixer and added raisins and the chopped toasted walnuts.
